Quail In Sour Cream Recipe
Ingredients
| Quail | 6 Pound, dressed | |
| 6 thin slices bacon or salt pork | ||
| Juniper berries | 12 | |
| Boiling water | 1 Cup (16 tbs) | |
| Dairy sour cream | 2 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Few drops Tabasco sauce | ||
| Salt | 1 Dash | |
| Pepper | 1 Dash | |
Directions
Wrap each bird in slice of bacon; fasten with toothpicks.
Crush juniper berries in Dutch oven; place birds atop and pour over boiling water.
Cover and simmer 35 minutes or till birds are tender.
Combine sour cream, lemon juice, Tabasco sauce, salt, and pepper; pour over quail and heat sauce just through.
