1 tbsp (15ml)oil
 
6 quails, boned
 
2 tbsp (30 ml) almonds, slivered
 
1/4 Cup (60 ml) green grapes
 
Salt and pepper
 
1 tsp (5 ml) pink peppercorns
 
1 Cup (250 ml) chicken stock
 
2 tbsp (30 ml) Amaretto (almond liqueur)

Directions

–  In a skillet, heat oil and sear the pieces of quail well on all sides. Add the almonds and grapes, and stir well. Add the Amaretto and stir well again.
–  Add salt and pepper, and the pink peppercorns, and pour in the chicken stock. Bring to a boil, then reduce heat and simmer, half-covered, for about 10 minutes.
–  When done, adjust the seasoning and serve with baby carrots.
