Quail A La Crème Recipe
Ingredients
| Quail | 4 , frozen | |
| Seasoned flour | ||
| Butter | 2 Ounce | |
| Button mushrooms | 4 Ounce | |
| Dry sherry | 4 Tablespoon | |
| Cream | 1/4 Pint, soured | |
| Chopped parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1) Toss the quails in seasoned flour.
MAKING
2) In a flameproof casserole, melt the butter.
3) Fry the birds and brown them from all the sides.
4) Add to the casserole, mushrooms and saute them.
5) Stir in sherry and season with salt and pepper.
FINALIZING
6) Cover the casserole and in oven cook at 375 degrees F for 40 minutes.
7) Mix the sour cream and adjust the seasoning in the casserole.
SERVING
8) Serve the dish hot with parsley garnish.
