Purple Potatoes Au Gratin Recipe

Purple Potatoes Au Gratin is a meal which is enjoyed equally by everyone in my family. My kids always lick their plates empty once I make them this Purple Potatoes Au Gratin. You are going to love seeing the speed at which it disappears from the table!

Ingredients

 
3 tbs (45 ml) olive or cooking oil
 
1 cup (240 ml) chopped onions
 
1 tbs (15 ml) chopped Fresh Thyme or 1 tsp (5 ml) crushed dried thyme
 
1/2 tsp (3 ml) salt
 
1/4 tsp (1 ml) pepper
 
1 lb (455 g) Purple Potatoes, peeled and thinly sliced
 
1 cup (240 ml) beef or chicken broth
 
1/2 cup (120 ml) finely shredded Swiss or Jarlsberg cheese

Directions

In a large skillet, heat oil.
Saute onions in oil 5 minutes over medium-low heat.
Remove 1/2 of the onions; reserve.
Stir in fresh thyme, salt and pepper to skillet.
Add raw potatoes; mix well.
Transfer mixture to an oiled 1 1/2-quart shallow baking dish; pour broth over potatoes.
Bake covered, in a 350°F (180°C) oven for 50-60 minutes or until broth is absorbed.
Top with reserved onions and cheese; bake 5 minutes more.
