2 cups (480 ml) chopped cooked Purple Potatoes
6 1/2-OZ can (195 g) white albacore tuna, drained and chunked
1 ripe tomato, seeded and chopped
1/2 cup (120 ml) sliced ripe olives
1 cup (240 ml) cooked cut green beans
1/2 cup (120 ml) olive oil or salad oil
1/3 cup (80 ml) white wine vinegar
1 tbs (15 ml)Fresh Tarragon
1/4 tsp (1 ml) salt
1/4 tsp (1 ml) pepper lettuce leaves
2 hard-cooked eggs, quartered
Directions
In a large bowl, gently toss together cooked purple potatoes, tuna, tomato, olives and green beans.
In a covered jar, shake together oil, vinegar, fresh tarragon, salt and pepper.
Pour over salad and toss.
Spoon onto lettuce-lined platter; garnish with cooked egg quarters.
