1 Throughly clean the peppers and scoop out the seeds.
2 Remove the outer skin from the onion and slice into rings 1/4-inch thick.
3 Coat the grill with cooking spray and preheat for 5 minutes.
4 In a medium bowl, add the vegetables along with the garlic, pepper and lemon juice.Toss gently.
5 Arrange the peppers and onions in layers in the grill and cook for 6-8 minutes.
6 On a warm platter, arrange the vegetables and serve.
