Chaat Puri Recipe
Pooris can be made in 2-3 different types.
Ingredients
first type:
2 cup Semolina (Rava / Suji)
6 tblsp Fine Wheat Flour (Maida)
1/2 tsp Baking Soda
Oil to deep fry
2nd type:
2 cup Semolina
1 a cup Wheat flour
1 a cup "Urad daal" flour *Optional
1 a cup Plain flour
Salt according to taste or 1 ½ teaspoons
3rd type:
type 2 + club soda instead of water
Directions
type 1
mix these ingredients & knead into a soft dough.wrap it in a wet cloth and leave it aside for about 30-45 min.Roll out into a chapati and cut into pani puri shapes using the desired size of cutter.(you may use a cap for cutting the puris).use dry maida while rolling.Heat oil in a pan and deep fry puris till very light brown and crisp.
Drain in a paper towel for a while to dry out the oil. (preferably on low & medium flame! store in air tight containers)
type 2 or 3
Mix the flours and salt together and knead into a stiff dough adding water or club soda a little at a time.
Add a little oil and knead till the semolina almost dissolves. Knead for a few minutes with oiled palms and cover with a damp cloth.
Keep aside for 30-45 min
