Ingredients
1 medium-size butternut squash, peeled, seeded, and cut into 1-inch cubes (5 to 6 cups)
1 cinnamon stick, cracked
3 strips orange rind
1/4 teaspoon salt
1 teaspoon grated orange rind
1/8 teaspoon each ground cinnamon and white pepper
Directions
1 In a large saucepan, combine the squash, cinnamon stick, orange peel strips, and 1/8 teaspoon of the salt. Add enough boiling water to just cover the squash, and simmer, covered, for 12 to 12 minutes or until the squash is tender. Drain in a colander, discarding the cinnamon stick and orange rind.
