Ingredients

 
Dried yellow split peas- 1/2 pound
 
Tomatoes- 1 pint
 
Water- 1 quart
 
Onion- 1
 
Celery tops- 1 or 2
 
Salt and pepper- to taste
 
Flour- 1 tablespoon
 
Butter- 1 tablespoon

Directions

MAKING
1.In a bowl, pour water and soak peas overnight, make sure the water should cover 2-4 inches
2.Next day remove the peas and drain them
3.In a saucepan, place the peas along with tomatoes, water, sliced onion, and celery tops
4.Make sure to cook until the peas are tender
5.Take a strainer, and mash the mixture through a sieve
6.Season with salt and pepper
7.Now bind with a roux made of the flour and butter

SERVING
8.Serve, garnished with a thin slice of tomato or lemon and a few canned peas if available.
