Ingredients
2 1/2 pounds fresh peas or 2 10-ounce packages frozen peas
3/4 cup water
2 tablespoons butter or margarine
1/2 teaspoon sugar
1/8 teaspoon pepper

Directions
1. Shell peas if using fresh ones (there should be about 3 cups).
2. In 3-quart saucepan over high heat, heat water to boiling; add peas and heat to boiling. Reduce heat to low; cover and simmer 3 to 5 minutes, until peas are tender. Drain peas, reserving cooking liquid.
3. In same saucepan, melt butter or margarine.
4. In blender at high speed, with center part of blender cover removed, or in food processor with knife blade attached, puree half of peas with 2 tablespoons cooking liquid until smooth. Pour into melted butter in saucepan. Repeat with remaining peas. Stir sugar and pepper into pureed peas; add salt to taste. Over medium heat, heat through, stirring occasionally.
