Puree Of Chick Peas Recipe
Ingredients
| 1 tin (500 g/18 oz) chick peas | ||
| Olive oil | 120 Milliliter | |
| Garlic | 3 Clove (5gm) | |
| 5 sprigs parsley, coarsely chopped | ||
| Lemon | 1 | |
| Salt | To Taste | |
Directions
1. In a large saucepan, bring some salted water to the boil. Open the tin of chick peas and drain. Plunge the chick peas into the water, cook for 2 minutes and drain.
2. Peel and crush the garlic. Mash the chick peas with a fork or puree them in a liquidizer. Place them in a bowl and add the olive oil, a little at a time, using a whisk. Add the garlic, mix well and leave to cool.
3. Before serving, sprinkle with the parsley and garnish with lemon wedges.
