Pure White Ecstasy Recipe
I doubt if there is a better source of protien and fiber than bean and that is the reason I love serving this Pure White Ecstasy to my loved ones. A great combination of sprouted beans, coconut and excellent flavoring, this salad is as tasty and healthy as it can be. Give it a try
Ingredients
Ash gourd 500 gms
Fresh coconut, grated 2 tbsp
Bean sprouts 1 cup
Cumin powder 2 tsp
Ginger, grated 1 inch
Lime, juiced 1
Finely chopped fresh coriander 1 tbsp
Peanuts, soaked overnight 1 tbsp
Rock salt to taste
Directions
Skin the ash gourd and store the peels for use later in a chutney.
Chop on the soft centre portion with seeds and store this separately for use in a soup stock.
Cut the gourd into quarters and chop finely as you would a big sized onion.
If you find chopping difficult, grate it or mince in a food processor.
These processes will however, make the pulp watery therefore chopping is recommended.
Transfer the chopped ash gourd to a glass serving bowl and add all the other ingredients, except the fresh coriander.
Mix well.
Garnish with fresh coriander and serve immediately.
