Puran Poli - Part 1: Preparing the Dough and Filling Recipe Video
Puran poli is a sweet flatbread stuffed with delicious cooked, mashed Yellow Split-Chickpeas & Jagerry/Sugar mixture. It is very yummy and nutritious indeed. It is a traditional Maharashtrian dish made on various special occasions.
Ingredients
Ingredients For Cover:
*3/4 cup Wheat Flour
*1/4 cup + For Dusting All-purpose Flour
*1/4 Tsp Salt
*3 Tbsp Oil (Hot)
*1/2 cup + 1 or 2 Tbsp Water
Ingredients For Puran:
*1 Cup Chana Dal/ Split Chickpeas
*3/4 to 1 Cup Grated Jagerry or Sugar or Combination of both (Adj to taste)
*Pinch of Turmaric Powder
*Drop of Oil
*1/2 Tsp Nutmeg Powder and / or
1/2 Tsp Cardamom Powder
*1 Tbsp Roasted Poppy Seeds Powder(optional)
*1/2 Tbsp Dry Ginger Powder (optional)
*Water to soak & cook Dal/ split chickpeas
Ingredients For Puran-Poli:
*Butter/Ghee as needed
Directions
Mix all the dry ingredients and pour hot oil in it. Add water and knead a dough, soft in texture.
Puran can be made with two methods:
Method 1
Cook dal until done. Dry it if needed.
Grind the dal. Add sugar or jaggery. Cook until sugar dissolves completely.
Method 2
Slightly overcook dal and drain excess water.
Add sugar or jaggery and cook until sugar dissolves.
Now divide the puran and dough into equal balls.
