Ingredients

 Unsalted butter3 Tablespoon (More For Greasing The Baking Dish)
 Yellow squash8 Medium, chopped
 Onion1 Medium, chopped
 Egg2 Large, beaten
 Minced fresh parsley2 Tablespoon
 Grated sharp cheddar cheese1 Cup (16 tbs)
 Salt1 Teaspoon
 Freshly ground black pepper1⁄2 Teaspoon
 Crushed potato chips1 Cup (16 tbs)

Directions

Preheat the oven to 350°F.
Lightly butter a 9 x 13-inch baking dish and set aside.
Place the squash and onions in a large pot with a small amount of water over medium heat.
Bring to a simmer and cook until tender, 8 to 10 minutes, then drain into a colander.
Place in a large bowl and mash with a potato masher.
Add the butter and stir until melted.
In a separate bowl, combine the eggs, parsley, cheese, salt, and pepper and add to the vegetable mixture.
Pour into the baking dish and bake for 20 minutes.
Top with the crushed potato chips and bake an additional 10 minutes, or until the potato chips are browned.
