Ingredients

 Pumpkin – 1 pound, peeled and cut into chunks
 Large onions – 2, peeled and sliced
 Tomatoes – 3, peeled and sliced
 Stock2 Pint
 Parsley – for garnishing, chopped
 Salt and pepper – as desired
 Salt and pepper – as desired

Directions

MAKING
1. In a pan, take vegetables and stock. Let it simmer for one hour.
2. Mash all the vegetables into the soup with a potato masher.
3. Season as per taste.

SERVING
4. Serve Pumpkin Soup topped with parsley.
