PUMPKIN SOUP Recipe
This Pumpkin Soup is more like stew and very satisfying.
Ingredients
| Pumpkin – 1 pound, peeled and cut into chunks | ||
| Large onions – 2, peeled and sliced | ||
| Tomatoes – 3, peeled and sliced | ||
| Stock | 2 Pint | |
| Parsley – for garnishing, chopped | ||
| Salt and pepper – as desired | ||
| Salt and pepper – as desired | ||
Directions
MAKING
1. In a pan, take vegetables and stock. Let it simmer for one hour.
2. Mash all the vegetables into the soup with a potato masher.
3. Season as per taste.
SERVING
4. Serve Pumpkin Soup topped with parsley.
