Pumpkin Pudding Recipe
Pumpkin Pudding was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. Use the freshest of Tofu available to get a delicious Pumpkin Pudding. Ingredients
Mix in a blender until smooth
2 CUPS COOKED PUMPKIN
1 LB. VERY FRESH TOFU
1 CUP HONEY
1/3 CUP ORANGE JUICE
1 CUP INSTANT NONFAT MILK POWDER
4 EGGS
1/4 TSP. SALT
1 TBS. CINNAMON
1 TSP. GRATED ORANGE RIND
1/2 TSP. GINGER
1/4 TSP. CLOVES
2 TSP. VANILLA
Directions
Pour the blended ingredients into a 9" square baking dish. Bake at 350° for 1 hour or until a knife inserted in the center comes out clean. Chill thoroughly.
