Pumpkin Oatmeal Bread Recipe

Ingredients
3 cups hot water
1 cup cooked, mashed pumpkin
1 cup cooked oatmeal
2 tablespoons honey
1 tablespoon salt
1/4 cup oil
2 tablespoons yeast
1/2 cup warm water
8-9 cups whole wheat flour
Directions
Combine hot water, pumpkin, oatmeal, honey, salt, and oil in Bosch bowl.
Soften yeast in warm water in a separate bowl, and add to ingredients in Bosch bowl.
Add flour, and knead mixture for 10 minutes.
Shape into four loaves, and place in greased 7 1/2 x 3 1/2 x 2 inch bread pans.
Let rise until double.
Bake in a 350° F.oven for 45 minutes.
Remove from pans, and cool on wire racks.
NOTE: A crushed vitamin C tablet and 2 tablespoons of liquid lecithin give the bread a lighter texture.
Two tablespoons lemon juice may be substituted for the vitamin C.
One half cup soybeans ground into soy flour may be substituted for lecithin.
