Pumpkin Butter Recipe

My friend’s daughter Yenene likes this Pumpkin Butter recipe. Though she is 15 years old, but she has mastered the cooking technique of this dish. Whenever there is a gathering of my family and my friends, she definitely cooks this dish. Our children also enjoy this dish. You should try this Pumpkin Butter recipe.

Ingredients

 
2 c. cooked pumpkin, mashed
 
1 pkg. powdered pectin
 
2 1/4 c. sugar
 
1/2 tbsp. pumpkin pie spice
 
1/4 tsp. unsalted butter

Directions

Step1-Place pumpkin in heavy kettle. Stir in pectin.
Step2-Place over high heat and bring to boil, stirring constantly. Stir in sugar, spice and butter. Continue stirring and bring to full rolling boil.
Step3-Boil hard exactly five minutes. Remove from heat. Stir six minutes.
Step4-Ladle into half-pint, sterilized jars, leaving 1/4-inch head space. Adjust caps to manufacturer's directions. Step5-Process 12 minutes in boiling water bath. After cooking, check seals.
