Pumpkin Treats Recipe
Ingredients
1 cup dried currants
1/2 cup butter, softened
1/2 cup honey
1/4 cup date sugar (optional)
2 eggs
1 1/2 cups pumpkin puree
2 teaspoons vanilla extract
2 1/2 cups sifted whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon baking soda
2 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1 cup chopped walnuts
Directions
Preheat oven to 350° F.
Butter 2 baking sheets.
Place currants in a small bowl, cover with boiling water, and set aside to plump for 15 to 20 minutes.
In a large bowl, beat together butter and honey.
Beat in date sugar, eggs, pumpkin, and vanilla.
In a medium-size bowl, sift together flour, baking powder, baking soda, cinnamon and ginger.
Add to liquid ingredients, mixing well.
Fold in drained currants and walnuts.
Drop by heaping tablespoonfuls onto prepared baking sheets, and bake on middle shelf of oven for 15 to 20 minutes, or until lightly browned.
Cool on wire racks.
