Pumpkin Spice Cookies Recipe
Ingredients
1 cup applesauce
1 packet dry Butter Buds Mix (not diluted)
1 cup sugar (or 1/2 cup sugar + 6 packets Sweet 'N Low)
1 Egg Beater
1 cup canned pumpkin
2 cups flour (all-purpose)
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. ground cloves
1/2 tsp. lite salt (optional)
1 cup Grape-Nuts cereal
Topping:
3 Tbs. sugar (or sugar substitute cinnamon-sugar blend)
1 tsp. cinnamon
Directions
Preheat oven to 375°F.
Spray 2 cookie sheets with a non-fat cooking spray.
In a large bowl blend applesauce, dry Butter Buds, sugar, Egg Beater, and pumpkin.
Add flour, baking soda, spices, and lite salt.
Mix well and stir in Grape-Nuts.
Chill dough 30 minutes.
Drop by teaspoonfuls onto cookie sheets.
Bake 10-12 minutes.
Topping: Combine sugar and cinnamon.
Removecookiesto wire racks to cool.
While still warm, sprinkle with topping.
