Easy Pumpkin Tomato Soup Recipe

2 tablespoons vegetable oil
 
1 medium-sized onion, finely chopped
 
2 ripe tomatoes, peeled, seeded, and chopped
 
1 to 1 1/2 pounds pumpkin, peeled and cubed
 
3 cups homemade vegetable or chicken broth
 
Salt and freshly ground black pepper
 
1 cup heavy cream or half-and-half

Directions

1. Heat the oil in a heavy kettle and saute the onion until tender but not browned. Add tomatoes, pumpkin, broth, and salt and pepper to taste. Bring to a boil, cover, and simmer for 30 minutes, or until the pumpkin is tender.
2. Puree in the container of an electric blender or a food processor and return to the kettle. Stir in the cream and reheat. Check the seasonings and add salt and pepper if needed.
