Ingredients

 
2 tablespoons butter
 
1/2 green pepper, chopped
 
1 large tomato, chopped
 
1 green onion, chopped (include part of the green top)
 
1 large sprig parsley
 
1 large sprig thyme, or 1/4 teaspoon of the dried herb
 
1 bay leaf
 
1 can (1 lb.) pumpkin or 2 cups cooked pumpkin
 
2 cups chicken stock
 
1 tablespoon flour
 
1/2 cup milk
 
1/2 teaspoon each nutmeg and sugar
 
Salt to taste

Directions

Melt butter in a large pan, add green pepper, tomato, onion, parsley, thyme, and bay leaf; simmer 5 minutes.
Add pumpkin and chicken stock and simmer 30 minutes.
Press mixture through a food mill or wire strainer.
Blend the flour with the milk and stir into the strained soup.
Season with nutmeg, sugar, and salt.
Heat, stirring often, while you bring soup to a boil; cook about 3 minutes.
