Ingredients

 
3 pounds pumpkin, cut into cubes and peeled
 
3 cups chicken stock or more to cover pumpkin
 
1 medium onion, chopped
 
2 celery ribs, chopped
 
Salt and fresh pepper to taste
 
Few grains of freshly grated nutmeg
 
2-3 tablespoons butter, softened
 
1 cup heavy cream
 
2-3 tablespoons rum, or to taste

Directions

Put all ingredients except butter, cream, and rum into saucepan.
Bring to a boil and cover.
Simmer until pumpkin is tender, about 15 minutes.
Puree in food processor, blender, or food mill.
Return to saucepan.
Beat in the butter with a whisk.
Add heavy cream and rum to taste.
If too thick, thin with chicken stock or cream.
Reheat.
