Ingredients

 
1 quart rich milk (or milk and part heavy cream)
 
1 medium-sized onion, sliced
 
4 whole cloves
 
4 sprigs parsley, bruised by pressing with the back of a spoon
 
1 clove garlic, pressed
 
1/4 of a whole nutmeg, grated
 
1 bay leaf
 
1 tablespoon chicken stock concentrate (or 3 chicken bouillon cubes)
 
2 cups canned pumpkin
 
1 teaspoon salt
 
Freshly ground pepper
 
1 tablespoon lemon juice
 
Minced parsley
 
About 6 teaspoons butter

Directions

Scald the milk with the onion, cloves, parsley, garlic, nutmeg, bay leaf, and chicken stock concentrate.
Add the pumpkin, salt, and pepper.
Cook over hot water for 15 minutes; pour through a wire strainer and add lemon juice to soup.
