Pumpkin And Chicken Soup Recipe
Ingredients
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Onion | 1 , minced | |
| Pumpkin puree | 1 Can (10oz) | |
| Chicken stock | 3 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| 1/4 teaspoon each ground mace, ground allspice, and ground ginger | ||
| Buttermilk | 2 Cup (16 tbs) | |
| Nutmeg | 1/4 Teaspoon, freshly grated | |
Directions
MAKING
1. Place a heavy large saucepan on medium heat, melt butter, add onions and sauté for 5 minutes, stirring frequently, till onions turn translucent.
2. Add stock, pumpkin puree, cinnamon, salt, ginger, cinnamon and allspice. Allow to simmer, without covering, for 10 minutes.
3. Add buttermilk, stir and cook till thoroughly heated.
SERVING
4. Top with nutmeg and serve hot.
