 Pumpkin8 Cup (16 tbs), peeled
 Sugar3 Cup (16 tbs)
 Water1 Cup (16 tbs)
 Lemon1
 Pineapple1 Can (10oz), diced
 1 (6-oz) jar Maraschino cherries
 Rum1/4 Cup (16 tbs)

Directions

Spread pumpkin cubes on a rack or wire netting; let dry in a good circulation of air for 24 hours.
Stir sugar and water together in a large saucepan over low heat, and when sugar is completely dissolved bring to a quick boil.
Add pumpkin and simmer gently until transparent.
Remove from heat; add juice and grated rind of lemon, diced pineapple with its juice, cherries halved, with some of their syrup if desired and rum.
Chill thoroughly.
