Pumpkin Salad Surprise Recipe
Ingredients
| Pumpkin | 8 Cup (16 tbs), peeled | |
| Sugar | 3 Cup (16 tbs) | |
| Water | 1 Cup (16 tbs) | |
| Lemon | 1 | |
| Pineapple | 1 Can (10oz), diced | |
| 1 (6-oz) jar Maraschino cherries | ||
| Rum | 1/4 Cup (16 tbs) | |
Directions
Spread pumpkin cubes on a rack or wire netting; let dry in a good circulation of air for 24 hours.
Stir sugar and water together in a large saucepan over low heat, and when sugar is completely dissolved bring to a quick boil.
Add pumpkin and simmer gently until transparent.
Remove from heat; add juice and grated rind of lemon, diced pineapple with its juice, cherries halved, with some of their syrup if desired and rum.
Chill thoroughly.
