Creamy Pumpkin Pudding Recipe Video

MAKING
1 In a large pan, add about 1 1/2 cup of roasted pumpkin.
2 Add in 1 1/2 cups of milk along with 1 teaspoon of pumpkin pie spice, mix well.
3 If you want your pie to be a little more sweet, add in about 1/3rd cup of maple syrup.
4 Stir and let the mixture heat.
5 Meanwhile, in a small bowl, dissolve about 2 1/2 tablespoons of cornstarch in water.
6 Stir it into the pumpkin mixture.
7 Remove from the heat once the pudding mixture starts bubbling and becomes thick.
8 Pour the mixture into the pudding cups and place in the refrigerator for at least one hour.
9 Meanwhile, prepare the maple crusted pumpkin seeds, In a saucepan, melt about 2 tablespoons of butter.
10 Add in 1 1/2 teaspoon vanilla flavoring, 2 table spoons of maple syrup and 1 tablespoon of maple sugar.
11 Cook, stirring until the mixture is reduced by half.
12 Add in the pumpkin seeds and stir to coat evenly.
13 Spread them out on a tray so that they do not stick.
SERVING
14 Garnish each pudding cup with the prepared seeds and serve.
