Ingredients

 Egg substitute equivalent to 2 eggs
 2 cups cooked pumpkin
 Sugar3/4 Cup (16 tbs)
 Ground cinnamon1 Teaspoon
 Ground ginger1/2 Teaspoon
 Ground cloves1/4 Teaspoon
 Evaporated milk1 Can (10oz), undiluted
 1 unbaked low-sodium 9-inch pie shell of Margarine Pastry or Oil Pastry

Directions

1. Preheat oven to 425°F.
2. Beat egg substitute 5 minutes.
3. Mix in pumpkin, sugar, spices, and milk.
4. Pour into pie shell.
5. Bake 15 minutes.
6. Reduce temperature to 350°F and continue baking 45-50 minutes or until knife inserted in center comes out clean.
