9 inch unbaked Basic Pie Shell
Cheese Layer
8 oz. cream cheese (softened)
2 tsp granulated sugar
1 tsp vanilla extract
1 egg
Pie Layer
1 1/2 cup cooked pumpkin (unsweetened)
1 cup evaporated skimmed milk
2 eggs
2 tsp granulated sugar
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
Directions
Prepare, but do not bake, pie shell.
Combine cream cheese, sugar replacement, vanilla and 1 egg in mixing bowl; stir to mix well.
Spread in bottom of unbaked pie shell.
Combine pumpkin, milk, 2 eggs, sugar replacement and spices in a mixing bowl or food processor, beating to blend thoroughly.
Carefully pour over cheese layer.
Bake at 350°F (175°C) for 65 to 70 minutes, or until knife inserted in center comes out clean.
