Ingredients
1/2 cup (1/4 lb.) butter or margarine
1 cup brown sugar, firmly packed
1 egg
1/2 cup canned pumpkin
1 1/2 cups unsifted regular all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon each ground ginger, allspice, and soda
1/2 cup chopped dates or raisins
1/2 cup chopped walnuts, pecans, or filberts
Orange Glaze
Directions
In the large bowl of your electric mixer, cream together the butter and sugar.
Add the egg and pumpkin and beat well.
Blend the flour with the spices and soda and sift into creamed mixture.
Add dates and nuts; mix well.
Spread evenly in a greased 11 by 16-inch baking pan.
Bake in a 350° oven until the cake begins to pull away from the sides of the pan€”16 to 18 minutes.
Spread with Orange Glaze.
