Ingredients

 
1 & 1/2 cups whole wheat flour
 
1/2 teaspoon baking powder
 
1 teaspoon baking soda
 
1/2 teaspoon salt
 
1/2 teaspoon ground ginger
 
1/2 cup vegetable oil
 
2/3 cup brown sugar
 
1/3 cup granulated sugar
 
1 cup pumpkin puree
 
1 egg
 
1 tablespoon grated orange rind
 
1/2 cup toasted chopped or slivered almonds

Directions

1. Preheat the oven to 350 degrees.
2. Mix together the flour, baking powder, baking soda, salt, and ginger.
3. Beat the oil, sugars, pumpkin, egg, and orange rind until blended.
4. Stir in the dry ingredients until well mixed. Add the almonds.
5. Turn into an oiled and lightly floured 8- by 4- by 2-inch loaf pan.
6. Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Remove from the pan and cool on a wire rack.
