Ingredients

 
6 oz tomato paste
 
Lime or lemon juice
 
1 tbsp Moutarde de dijon
 
1 c water
 
1 tbsp brown sugar
 
3.5 lbs shoulder blade pork
 
1 tsp paprika
 
1 tsp cumin
 
1 tsp salt
 
1 tsp pepper
 
1/4 minced garlic
 
1/4 c onion diced
 
1/4 c jalapeno chopped
 
1 dried chili pepper
 
chopped oregano
 
1 c water or orange, tomato juice, apple cider

Directions

In a pan mix tomato paste, lime or lemon juice, water dijon, brown sugar and coat pork in it. Then add cumin and paprika, salt, pepper, onion, garlic and jalapeno to the pork. Add chili pepper and oregano also. Cover the pan and cook it for 4 hours at 250 F in an oven. When the pork is done, shred or pull the pork and removes bones from it. Now add water, return to oven for 30 minutes and serve on a bun with coleslaw.
