Pulav Recipe
This quick and easy pulav is a medley of colorful vegetables, nuts and chickpeas with rice. The dish is wholesome, tasty and full of nutrients. It is the perfect answer to a lazy Sunday afternoon or a meal put together in a jiffy. Either way it is tasty. Vary it to suit your taste, there are really no rules.

Ingredients
1 1/2 cup rice
1/2 cup frozen green beans
1 cup cauliflower cut into small florets
1 large onion chopped
2 cloves garlic crushed
1/2 cup chickpea or Garbanzo beans soaked and boiled or the canned.
2 slit green chillies
2 tsp cumin seeds
1/4 cup cashews
handful of raisins
Butter or ghee (quantity your choice)
Salt and pepper to taste
Directions
Wash the rice and soak in water for 15 minutes.
Cook the rice in water equal to 1 1/2 cups for a cup of rice.
Put it in a heavy bottom pan and bring the contents to a boil cover and simmer till done.
While the rice cooks....
Warm up the butter or Ghee and add the cumin and green chilles. Let it sizzle.
Add the cashews and raisins.
Add the garlic followed by the onions.
Saute until they turn transparent.
Add the green beans and cook for a minute.
Follow with cauliflowers and let cook for a minute.
Add the chickpeas and mix well. Season with salt and pepper.
Once the rice is cooked open the lid and let the steam out.
Add the rice to the veggie mixture. Blend well and serve.
Goes well with a raita.
