Ingredients
6 potatoes, peeled and quartered
2 teaspoons Dijon mustard
3/4 cup skim milk
1/4 cup chopped scallions
1/3 cup nonfat grated cheese
2 egg whites
Directions
Place potatoes in a large, heavy pot.
Cover with water.
Boil, covered, for 20 minutes or until tender.
Drain potatoes.
Preheat oven to 375 degrees.
Mash potatoes with a potato masher or large fork.
Beat milk into mashed potatoes and mash again until smooth.
Stir in cheese, mustard, and scallions.
Place in a nonstick baking dish or a baking dish lightly sprayed with vegetable cooking spray.
Just before baking, beat egg whites until stiff and spread on top of the potatoes.
Bake for 50 minutes.
Cover with water.
