Puffed Wild Rice Recipe
Ingredients
Salad oil
1/3 cup wild rice
Directions
1. In small saucepan over medium heat, heat 1 inch salad oil to 375°F.
2. Meanwhile, rinse wild rice; drain. Place rice on paper towels; pat completely dry. (If rice is wet, oil will splatter during cooking.)
3. Place about 1 teaspoon wild rice in a small sieve (just enough to cover bottom of sieve). Hold sieve with wild rice in hot oil until rice puffs and floats to top of oil, and foaming around the rice stops (about 15 seconds). Remove puffed wild rice to paper towels to drain. Repeat with remaining wild rice. Cool; store tightly covered.
