Puffed Open Face Tuna Sandwich Recipe
Ingredients
| Mayonnaise | 1 Tablespoon | |
| Scallion | 1 Tablespoon, finely chopped | |
| Capers | 1 Teaspoon, chopped | |
| Dijon-style mustard - 1/2 teaspoon | ||
| Lemon juice | 1/2 Teaspoon | |
| Canned tuna | 4 Ounce, drained, flaked | |
| Egg white | 1 | |
| Salt - A dash | ||
| Whole wheat bread - 4 slices, lightly toasted | ||
Directions
MAKING
1) Put the mayonnaise, chopped scallions, mustard, capers and lemon juice in a medium bowl. Mix well.
2) Add the tuna and stir well.
3) Combine together the egg white and the salt in a small bowl.
4) Beat well till stiff peaks form.
5) Into the tuna mixture, fold the egg white.
6) On each slice of bread, spread about 1/4th of the mixture.
7) Put the bread slices on a broiler pan and broil till they are puffed. This usually takes 2 to 3 minutes.
SERVING
8) Serve hot.
