Ingredients

 
1 medium-sized head of cauliflower
 
1/4 cup margarine
 
2 tablespoons flour
 
1 cup milk, or milk and water in which the cauliflower has been cooked
 
1/4 cup fine white bread crumbs
 
3 eggs (separated)
 
1 cup grated cheese

Directions

Preheat oven to 400°F.
1. Wash the cauliflower, remove stalk end, cut into quarters, and remove the hard stalk. Divide into flowerets, and cook in boiling salted water until tender. Then drain.
2. Heat the fat in a pan, add flour, and stir over low heat for 2 minutes. Remove from the heat, add milk gradually, and stir until smooth. Return to the heat and stir until boiling. Add salt and pepper and most of the bread crumbs.
3. Stir in egg yolks, grated cheese, and the cauliflower. Adjust the seasoning to taste.
4. Beat egg whites until stiff and fold into the mixture. Put into a greased ovenproof dish, sprinkle with the remaining bread crumbs, and bake for about 30 minutes until well risen and brown.
