Puff Topped Apples Recipe
Ingredients
| Apples | 2 | |
| Currants | 2 Tablespoon | |
| Clear honey | 2 Tablespoon | |
| Walnuts | 2 Tablespoon, chopped | |
| Butter | 1/4 Cup (16 tbs) | |
| Eggs | 2 Small | |
| Cornstarch | 1 Teaspoon | |
| Confectioner’s sugar | 2 Tablespoon | |
| Candied orange peel | 1 Tablespoon, chopped |
Directions
Peel the apples.
Halve horizontally and remove the cores.
Mix together the currants, honey, walnuts and half the butter.
Fill the hollows in the apples with this mixture.
Separate the egg yolks from the whites.
Beat the yolks with the cornstarch and confectioners' sugar.
Beat the whites until stiff, then fold into the yolk mixture.
Sprinkle the candied orange peel over the apple halves, then cover each with the egg mixture, piling it up.
Melt the remaining butter in a frying pan.
Put the apple halves in the pan, apple sides down, and fry for 3 minutes, then cover the pan and cook for a further 2 minutes.
Serve hot.
