Puerto Rican Cornmeal Pie Recipe
Ingredients
1 tablespoon oil
1 pound lean pork, cubed
1 small onion, chopped
1/2 green pepper, chopped
1/4 cup celery and tops, chopped
2 hard-cooked eggs, chopped
1/2 teaspoon salt
1/2 cup stock, hot
Directions
Heat oil.
Lightly saute pork, onion, pepper and celery.
Remove from heat.
Add remaining ingredients and blend.
Spread mixture over dough.
Bake in 350° F. oven for 25 minutes, or until crust is crisp.
