Ingredients
2 Cups Corn Meal
1/2 Cup Whole Wheat Pastry Flour
1 Tsp. Baking Powder
1/2 Tsp. Soda
1/2 to 1 Tsp. Fresh Ground Black Pepper (To Taste)
1 Cup Grated Mild Cheddar Cheese
2 Eggs, Beaten
1 Tbsp. Honey
1 Tbsp. Oil
2 Cups Buttermilk
Directions
Mix together corn meal, flour, baking powder, soda and pepper.
Blend in grated cheese.
In another bowl, whisk eggs, honey, oil and buttermilk.
Make a well in the dry ingredients and quickly stir in liquid mixture.
Spoon into greased muffin cups and bake until tester comes out clean.
Bake at 375 degrees 20 to 25 minutes
