Directions

Remove skin and meat from turkey bones.
Grind turkey skin, meat, and ham twice through the finest blade of a meat grinder.
Beat in 7 eggs, one at a time.
Stir in truffles, mushrooms, salt, nutmeg, and pepper.
Blend well.
It may be necessary to add some cracker crumbs.
Shape mixture into 5 rolls 2 to 3 inches in diameter and 6 to 8 inches long.
Roll in 2 beaten eggs.
Roll in cracker crumbs.
Wrap roll in cheesecloth and tie ends to seal tightly.
Put roll into a deep kettle.
Add enough hot chicken broth just to cover.
Cover kettle and simmer for 1 hour.
Remove roll from broth and chill.
Remove cheesecloth; cut roll into thin slices.
Makes 15 to 20 servings.
