Recipe Story

Ingredients

 
1 can (20 oz.) crushed pineapple in juice, undrained
 
1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
 
1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping
 
1 pkg. (10 oz.) round angel food cake
 
10 fresh strawberries

Directions

MIX pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping.
CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with one-third of the pudding mixture. Repeat layers two times.
REFRIGERATE at least 1 hour. Top with berries just before serving. Store leftovers in refrigerator.

A friend of mine made her own version of this using mandarin oranges instead of pineapple & all sugar free ingredients including the angel food cake she had found at the supermarket. It was absolutely delicious!! Very light, too. I'm going to give a try for Thanksgiving.

i have a 3rd eye! nah...just kidding. i remember seeing your previous comment about a pineapple upside down cake a long time ago and it seems you were so happy about it. my mom usually boast about her version of this cake and i was planning that i'll make her one someday while i was searching here about it, i came to see your positive comments... then again i saw your post yesterday and saw pineapple in one of the ingredients and that's how i came to a conclusion that maybe you really do like pineapples. pineapples are really good and as they say it's really high in the BIG-C! well good luck with the presentation next time! ciao! ^_^

Ha ha ..how did you know, i do like pineapples a lot!. I did try the cake. It didnt look as pretty as professional as in the photo. But was simply delicious. Its not too heavy either. Not too dissatisfied with it. Will work on the presentation part next :)
