A friend of mine made her own version of this using mandarin oranges instead of pineapple & all sugar free ingredients including the angel food cake she had found at the supermarket. It was absolutely delicious!! Very light, too. I'm going to give a try for Thanksgiving.

i have a 3rd eye! nah...just kidding.
i remember seeing your previous comment about a pineapple upside down cake a long time ago
and it seems you were so happy about it. my mom usually boast about her version
of this cake and i was planning that i'll make her one someday while i was
searching here about it, i came to see your positive comments... then again i saw your post
yesterday and saw pineapple in one of the ingredients and that's how i came to a conclusion
that maybe you really do like pineapples.
pineapples are really good and as they say it's really high in the BIG-C!

Ha ha ..how did you know, i do like pineapples a lot!.
I did try the cake. It didnt look as pretty as professional as in the photo. But was simply delicious. Its not too heavy either. Not too dissatisfied with it. Will work on the presentation part next :)
