Prune Topping Recipe
Ingredients
| Sugar | 1 Cup (16 tbs) | |
| Flour | 1 Tablespoon | |
| Cornstarch | 1 Tablespoon | |
| 3/4 cup reserved prune liquid or bottled prunejuice | ||
| 1 egg, slightly beaten | ||
| 1 cup pecans, coarsely chopped | ||
| Prunes | 1 Cup (16 tbs) | |
| Butter/Margarine | 2 Tablespoon | |
Directions
Mix sugar, flour, and cornstarch in the top of a double boiler.
Add prune liquid gradually, stirring constantly.
Bring to boiling over direct heat and cook 3 minutes, stirring constantly.
Place over simmering water; cover and cook 12 minutes, stirring occasionally.
Vigorously stir about 2 tablespoons hot mixture into egg.
Immediately blend into mixture in double boiler.
Cook over simmering water 3 to 5 minutes, stirring constantly.
Remove from heat and blend in the pecans, prunes, and butter.
