Simple Prune Spice Cake Recipe

Ingredients

 
3 cups sifted Swans Down Cake Flour
 
2 1/4 teaspoons Calumet Baking Powder
 
1 teaspoon baking soda
 
1 teaspoon salt
 
1 teaspoon cinnamon
 
1 teaspoon nutmeg
 
1/2 teaspoon mace
 
3/4 cup shortening
 
2 cups sugar
 
3 eggs
 
1 teaspoon vanilla
 
1 1/2 cups drained coarsely chopped prunes
 
1 1/4 cups buttermilk

Directions

Sift flour, baking powder, soda, salt, and spices together.
Cream shortening.
Add sugar gradually and cream together until light and fluffy.
Add eggs, one at a time, beating well after each.
Add vanilla and prunes.
Add flour alternately with buttermilk, beating well after each addition.
Pour batter into three 9-inch layer pans or two 9x9x2-inch pans which have been lined on bottoms with paper.
Bake in a moderate oven (350°F.) 30 to 35 minutes for round pans and 35 to 40 minutes for square pans.
Cool.
Frost with Butter Cream or Coffee Butter Cream Frosting
