Prune Spice Cake Recipe
Ingredients
1 cup sifted all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon soda
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup shortening
1/2 cup prune juice
1 egg
1/2/ teaspoon vanilla Prune Butter Frosting
Directions
Sift together flour, sugar, baking powder, soda, 1/4 teaspoon salt, and spices into mixer bowl.
Add shortening, half the prune juice, and egg.
Beat 2 minutes with electric mixer.
Add remaining prune juice and vanilla.
Beat 2 minutes.
Pour into well greased and lightly floured 8x8x2 inch baking pan.
Bake at 350° for 25 to 30 minutes, or till done.
Cool.
Frost with Prune Butter Frosting: Cream 3 tablespoons butter; gradually add 1 1/2 cups sifted confectioners sugar and dash salt, blending well.
Add enough prune juice (about 1 tablespoon) for spreading consistency.
