Ingredients
1 cup prune pulp
1/2 cup sugar
1/4 teaspoon salt
2 teaspoons lemon juice
1 teaspoon grated lemon rind (optional)
3 egg whites
Directions
Mix the sugar, prune pulp, and salt.
Add lemon juice and rind.
Beat the egg whites until stifF Fold in the prune pulp.
This mixture may be chilled and served without cooking.
it may be poured into a greased baking dish, set in a pan of hot water, and baked in a moderate oven (350° F ) until firm, or for about 40 minutes.
Or, it may be poured into a greased double boiler and cooked over hot water for 1 hour.
