Prune Pinwheel Cookies Recipe
Prune Pinwheel Cookies are a scrumptious snack. Combining some delicious flavors, these cookies have prunes vanilla and a hint of lemon! With just a little effort, and 15 minutes in the oven, you have baked yourself a great tea time accompaniment!
Ingredients
Cooked prunes - 3/4 cup, chopped, pitted and unsweetened
Cooking liquid from prunes - 1/4 cup
Sugar - 1/4 cup
Lemon rind - 1/4 teaspoon, grated
Shortening - 1/2 cup
Brown sugar - 1 cup, firmly packed 1 egg
Vanilla - 1 teaspoon
Sifted flour - 1 3/4 cups
Salt - 1 teaspoon
Baking powder - 1/2 teaspoon
Directions
GETTING READY
1) Grease a baking sheet.
MAKING
2) In a saucepan, combine the prunes, cooking liquid, and sugar.
3) Gently heat, stirring frequently till the mix thickens.
4) Remove from heat and add in the lemon rind.
5) Cool completely.
6) In a bowl, combine and cream the shortening and sugar till light and fluffy.
7) Blend in the egg and vanilla.
8) Sift together the flour, salt, and baking powder.
9) Blend into the creamed mix and work till a soft dough.
10) Refrigerate.
11) Turn out onto a sheet of waxed paper and pat into rectangular shape.
12) Roll to a 9 x 12-inch rectangle.
13) Spread the cooled filling over the dough and roll as for a jelly roll.
14) Pinch the edges to seal.
15) Roll in a waxed paper and refrigerate for several hours.
16) Using a sharp knife, cut into 1/4-inch slices.
17) Arrange on the baking sheet.
18) Place in the oven at 375° F and bake for 12 to 15 minutes.
