Prune-Filled Coffee Cake Recipe
Ingredients
Dried prunes - 7 cups
Cinnamon - 1/2 teaspoon
Butter – 1/2 cup plus 3 tablespoons
Sugar – 1 cup plus 2 tablespoons
Walnuts - 1/2 cup, chopped
Eggs - 3
Lemon rind - 2 tablespoons
Flour - 3 cups, sifted
Baking powder - 3 teaspoons
Soda - 1 teaspoon
Evaporated milk - 1 cup
Lemon Juice - 1 tablespoon
Confectioners' sugar icing
Directions
GETTING READY
1) Preheat oven to 375° F.
2) Grease a 10 inch tube pan.
MAKING
3) Take a bowl and place prunes in it. Pour enough hot water to cover them.
4) Let stand for about 5 minutes. Drain and chop.
5) Take a bowl and combine in it cinnamon, prunes, 3 tablespoons melted butter, walnuts and 2 tablespoons sugar. Set aside.
6) Take a large electric mixer bowl and cream 1/2 cup butter in it.
7) Gradually add about 1cup sugar and beat well.
8) Add the eggs, one at a time. Beat well upon each addition.
9) Add lemon rind.
10) Take a large bowl and sift baking powder, baking soda and flour in it.
11) Combine lemon juice and milk.
12) Gradually add flour mixture to the butter mixture alternating with milk mixture. Beat well upon each addition.
13) Turn half the batter into the prepared pan.
14) Spread the prune mixture evenly over batter.
15) Top with remaining batter.
16) Bake for about 1 hour. Cool.
17) Remove from pan.

18) Drizzle with icing sugar and garnish with walnut halves.
