Prune Chewies Recipe
Prune Chewies are a great way for afternoon munching or to couple with a hot sip of tea or coffee. Quick to make, follow this recipe for and brighten up your evenings.

Ingredients
| Butter | 1/2 Cup (16 tbs) | |
| Light brown sugar | 1 Cup (16 tbs), firmly packed | |
| Flour | 1 Cup (16 tbs) | |
| Cornstarch | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Prune juice - 1/4 cup | ||
| Plumped prunes - 1 1/2 cups, chopped | ||
| Walnut meats - 1 cup, chopped | ||
| Lemon rind - 2 teaspoons, grated | ||
| Lemon juice | 2 Tablespoon | |
| Eggs | 2 Small | |
| Angel flake coconut - 1 4-ounce can | ||
| Vanilla extract | 1 Teaspoon | |
Directions
GETTING READY
1) Grease a 9" x 9" x 2" pan.
MAKING
2) Combine the butter, 1/2 cup brown sugar and flour and cream till crumbly.
3) Pat out into the pan, having mixture 1" high around edge.
4) Place in the oven at 350°F. and bake for 20 minutes.
5) Combine the remaining 1/2 cup brown sugar, cornstarch, salt, prune juice, prunes, lemon rind and juice.
6) Cook till thickened.
7) Add in the walnuts.
8) Spread out over the baked mix.
9) Beat in the eggs.
10) Add in the coconut and vanilla extract.
11) Spoon evenly over the prune mix.
12) Place in the oven and bake at 350° F. for 35 minutes.
13) Cool.

14) Cut in squares and serve.
