Prune Whip Pie Recipe
Ingredients
| 1 pound prunes, cooked, pitted, and cut up | ||
| Sugar | 1/2 Cup (16 tbs) | |
| Nuts | 3/4 Cup (16 tbs), chopped | |
| Salt | 1/8 Teaspoon | |
| 1 teaspoon grated lemon rind | ||
| Lemon juice | 1 Tablespoon | |
| 2 egg whites, stiffly beaten | ||
| 1 baked 9-inch pastry shell | ||
| Heavy cream | 1/2 Cup (16 tbs) | |
| Few drops of almond or rum extract | ||
Directions
Mix first 6 ingredients.
Fold in beaten egg whites.
Pour into pie shell and bake in preheated slow oven (325°F.) for 20 minutes, or until set.
Cool.
Whip cream and add flavoring.
Spread on pie.
